La Pastora is one of the farms under the Coopetarrazu cooperative. Located on the Pacific side in the Los Santos region, the plantations rise to an altitude of 1200–1900 meters. The cooperative's environmental efforts include 100% recycling of by-products from coffee processing, as well as significant reductions in water and electricity consumption. Additionally, the cooperative operates several daycare centers for children and provides centralized advisory services for its members on coffee cultivation.
The coffee is fairly strong and rich in character, combining almond and chocolate notes with a maple syrup-like richness.
